Metabarcoding of microbiota from biopreserved cold-smoked salmon for MASTER project, 2022
The objective is to study the impact of three Carnobacterium strains inoculated in cold-smoked salmon slices at different concentrations on the microbiome, chemical and sensory quality of the product during the storage under vacuum at chilled temperature

The DNA was extrated from all samples following the internal method in MASAE-EM3B. Region V3- V4 of the 16S-RNA gene was amplified with PrimerF CCTACGGGNGGCWGCAG and PrimerR GACTACHVGGGTATCTAATCC. The Illumina MiSeq sequencing was subcontracted to the Microsynth society. |
